Hawaiian-Style Veggie Skewers

Serves 2 (but can easily be doubled)

1/2 cup fresh pineapple cut into cubes

1/2 cup orange bell pepper cut into cubes

1/2 cup button mushrooms

4 cherry tomatoes

1/2 cup zucchini cut into cubes

1/2 cup Maui (sweet) onions cut into wedges

2 tablespoons teryaki sauce

4 wooden skewers, soaked in water for 30 minutes

Nonstick vegetable spray

1. Toss the pineapple and vegetables  with the teriyaki sauce and let stand for about 10 minutes.

2. Thread items onto the skewers. Spray with nonstick vegetable spray.

3. Grill over medium heat, turning skewers once, until the vegetables are tender, about 8 minutes total.
